1 tablespoon olive oil

1 red onion, finely minced

1 tablespoon fresh ginger root, chopped

2 cups cranberries

1/4 cup golden raisins

2 tablespoons brown sugar

1 tablespoon maple syrup

1/4 cup brandy

2 tablespoons balsamic vinegar

1/2 cup orange juice

1/4 teaspoon cayenne pepper

1 cinnamon stick

1/2 teaspoon ground nutmeg

2 cups cranberry juice

1/2 teaspoon kosher salt

  1. Place a large skillet over medium heat.
  2. Add the oil
  3. When hot, add the onion and ginger and cook for 1 minute.
  4. Add the cranberries, raisins, brown sugar, maple syrup, brandy, balsamic vinegar and orange juice.
  5. Cook until syrupy and reduced by half, about 10 minutes.
  6. Add the cayenne, cinnamon, nutmeg and cranberry juice and simmer until thickened, about 12-15 minutes.
  7. Remove the cinnamon stick and set aside to cool.
